It’s easy breezy, not heavy like a lot of the creamy versions out there, and made with a few simple ingredients that pack a punch of flavor. Crunchy, refreshing, herby, tangy…it’s kind of a big dill.

Ingredients

Here’s what you need…and it’s not much!

  • English cucumbers – English cucumbers are extra snappy with thin, crisp skins. You can find them at pretty much any grocery store.
  • Feta cheese – for a creamy, salty bite, crumbled feta cheese is the perfect addition. If you’d like to make this salad vegan, leave it out!
  • Garlic – a little garlic adds complexity.
  • Fresh mint – fresh mint adds cool, bright herbaceousness.
  • White wine vinegar – white wine vinegar adds acidity without being too harsh. It’s fruity and light! Don’t have it? Try white balsamic vinegar or champagne vinegar.
  • Extra virgin olive oil – olive oil adds a touch of fruitiness and brings everything together.
  • Dried oregano – dried oregano is earthy, a little peppery, warm and savory. It really ties all those mediterranean flavors together!
  • Red chili flakes – for a little heat, add a sprinkle of chili flakes (or leave them out if preferred).

How to Make Cucumber Salad

You won’t believe how easy (and delicious) this cucumber salad is! It’s literally the best and only 2 steps…

Step 1: Mix all of the ingredients together.

Step 2: Let it marinate for at least 10 minutes before enjoying. That’s it!

Tips & Tricks

  • Cut your cukes evenly: slice the cucumbers into thin rounds that are the same size for the most beautiful and delicious results!
  • Let it marinate: let the salad chill out on the counter for a few minutes to let all those flavors come together. It makes all the difference!

Variations

  • Creamy version: add in a few tablespoons of mayo for a creamy cucumber salad.
  • Asian Cucumber Salad: this salad has a blend of delish Asian flavors.
  • Tomato Cucumber Salad: add in tomatoes for a juicy, extra colorful salad!

Make Ahead and Storage

I recommend enjoying this cucumber salad right away (within 2 hours) although it will last for up to 24 hours if needed (though it won’t be quite as good!).

Store leftovers in an airtight container in the fridge, rejuvenating with a splash of olive oil and vinegar if needed.

Ingredients 

  • 2 English cucumbers, cut into ¼” rounds
  • ½ cup crumbled feta cheese
  • 2 garlic cloves, minced
  • 2 tablespoons fresh mint, chopped into thin ribbons
  • 2 tablespoons white wine vinegar, or more if desired
  • ½ tablespoons extra virgin olive oil
  • ½ teaspoon dried oregano
  • Red chili flakes, to taste
  • Salt and pepper, to taste

Instructions 

  • In a medium bowl, toss together all of the ingredients until well combined.
  • Let marinate for 10-15 minutes for best results. Toss again, and serve!
