Ingredients
Here’s what you need…and it’s not much!

- English cucumbers – English cucumbers are extra snappy with thin, crisp skins. You can find them at pretty much any grocery store.
- Feta cheese – for a creamy, salty bite, crumbled feta cheese is the perfect addition. If you’d like to make this salad vegan, leave it out!
- Garlic – a little garlic adds complexity.
- Fresh mint – fresh mint adds cool, bright herbaceousness.
- White wine vinegar – white wine vinegar adds acidity without being too harsh. It’s fruity and light! Don’t have it? Try white balsamic vinegar or champagne vinegar.
- Extra virgin olive oil – olive oil adds a touch of fruitiness and brings everything together.
- Dried oregano – dried oregano is earthy, a little peppery, warm and savory. It really ties all those mediterranean flavors together!
- Red chili flakes – for a little heat, add a sprinkle of chili flakes (or leave them out if preferred).

Make Ahead and Storage
I recommend enjoying this cucumber salad right away (within 2 hours) although it will last for up to 24 hours if needed (though it won’t be quite as good!).
Store leftovers in an airtight container in the fridge, rejuvenating with a splash of olive oil and vinegar if needed.

Ingredients
- 2 English cucumbers, cut into ¼” rounds
- ½ cup crumbled feta cheese
- 2 garlic cloves, minced
