Picture this bite: toasty bun, tender Grilled Chicken Breast with caramelized edges, crisp lettuce, juicy tomato, and a luscious layer of sauce made from creamy mayo, tangy dill relish, chopped sweet onion, lemon juice and fresh parsley.

While the sauce is my favorite part of this recipe, we can’t forget about the chicken itself. My trick for grilling chicken breast using balsamic vinegar makes for the most juicy chicken with a flavorful, crispy, charred exterior! Just wait until you sink your teeth into one (or two or three) of these sammies!

Why This Grilled Chicken Sandwich Is the Best

  • The homemade sauce is absolutely divine on these sandwiches, and to dip any side veggies or potatoes in!

Ingredients

  • Chicken breasts – you’ll need medium chicken breasts to grill until they’re juicy and tender! Can’t grill? Bake Chicken Breast (At 425) for just as delicious results!
  • Hamburger buns – I like brioche buns, but you can also use wheat or regular buns, or even get creative and use Drop Biscuits or croissants.
  • Bibb lettuce – Bibb lettuce offers the best coverage but you can use romaine leaves or any other crunchy leaf lettuce instead.
  • Tomato – for a touch of sweet acidity, use a ripe regular or heirloom tomato.
  • Balsamic vinegar – balsamic vinegar is the trick for the most flavorful and tender chicken breast! Marinating chicken in balsamic adds flavor, tenderizes the meat, helps lock in moisture, and creates a delicious caramelized crust on the outside.

Sandwich Sauce

  • Mayonnaise – the base of our creamy sandwich sauce is mayo. Use the real stuff.
  • Dill relish, or sweet relish – dill relish can be found right in the grocery store, and adds tangy, pickled deliciousness. You can use the sweet stuff if preferred.
  • Sweet onion – for a sweet crunch, use sweet onion!
  • Italian parsley – parsley adds a pop of green freshness.
  • Lemon juice – for more freshness and a little acidity to cut the mayo, add a splash of fresh lemon juice.
  • Ground mustard – ground mustard adds just a touch of that distinctive kick, similar to horseradish.

How to Make a Grilled Chicken Sandwich

You can’t beat a delicious chicken sandwich, stacked high with juicy grilled chicken, veggies, and a drool-worthy homemade sauce. Full instructions in the recipe card!

  1. Make the sandwich sauce: mix together mayo, relish, onion, parsley, lemon juice, ground mustard, and salt and pepper.
  2. Grill chicken. Marinate chicken in balsamic vinegar for 5 minutes. Grill at 450℉ for 6-8 minutes per side.
  3. Let chicken rest. Sprinkle with salt and pepper, and let rest for 5 minutes. Toast buns.
  4. Slice chicken. Slice the chicken breasts against the grain into 1/2-inch thick slices. Hold your knife at a slight angle, about 45 degrees, for flatter slices.
  5. Layer. Fill bottom buns with a layer of chicken.
  6. Add toppings. Then add tomato slices, lettuce, and extra chopped onion.
  7. Spread sauce. On the top bun, spread sauce to your liking.
  8. Enjoy! Put your sandwiches together, and dig in.

Ingredients 

  • 3 medium chicken breasts
  • 4 hamburger buns of choice, like brioche or wheat
  • 4 Bibb lettuce leaves
  • 1 large tomato, cut into 4 slices
  • ¼ cup balsamic vinegar, to marinate chicken
  • Salt and pepper, to taste

Sandwich Sauce

  • ½ cup mayonnaise
  • ¼ cup dill relish, or sweet relish if preferred
  • ¼ cup sweet onion, finely chopped (plus more for topping if desired)
  • 1 tablespoon Italian parsley, finely chopped
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon ground mustard
  • Salt and pepper, to taste

Instructions 

  • Make the sandwich sauce by mixing together mayo, relish, onion, parsley, lemon juice, ground mustard, and salt and pepper. Set aside.
  • Preheat grill to 450℉. While preheating, marinate chicken in balsamic vinegar for 5 minutes. Grill for 6-8 minutes per side, or until the internal temperature of the chicken reaches 165 degrees.
  • Sprinkle grilled chicken with salt and pepper, and let rest for 5 minutes. Meanwhile, toast buns.
  • Slice the chicken breasts against the grain into roughly ½-inch thick slices. Hold your knife at a slight angle, about 45 degrees, as you cut. This creates wider, flatter slices that will lay nicely on a bun.
  • Fill the bottom buns with a layer of chicken slices.
  • Then add tomato slices, then lettuce, and any extra chopped onion.
  • On the top bun, spread about 2 tablespoons of sauce per bun (or desired amount).
  • Put your sandwiches together, and enjoy!

Notes

  • If you like a lot of sauce, double the sauce recipe. The above quantities make roughly 2 tablespoons of sauce per sandwich.
  • Other optional toppings: bacon or cheese like cheddar, provolone, Swiss, or pepperjack.
  • You can grill buns if preferred, for about a minute.
  • Depending on the size of your buns, you may have a little extra chicken.
  • You can make the sauce up to 3 days ahead! You can also make the chicken ahead, reheating in a 350 degree oven until just warm, wrapped in foil.
