This cucumber salad is crunchy, refreshing and packed with herbs, creamy feta, and a bright splash of vinegar. It’s the kind of effortless side dish you’ll want to make all summer long.

Ingredients

English cucumbers
cut into ¼” rounds
½
cup
crumbled feta cheese

garlic cloves
minced

tablespoons
fresh mint
chopped into thin ribbons

tablespoons
white wine vinegar
or more if desired

tablespoons
extra virgin olive oil
½
teaspoon
dried oregano
Red chili flakes
to taste
Salt and pepper
to taste
Instructions
In a medium bowl, toss together all of the ingredients until well combined.
Let marinate for 10-15 minutes for best results. Toss again, and serve!
