They’re also much more forgiving than other cuts. If preferred, you can use another cut of chicken but this recipe is catered toward bone-in, skin-on chicken thighs!
- Scotch Bonnet peppers, OR Fresno pepper + cayenne, OR red bell pepper + cayenne OR red bell pepper – Scotch Bonnets give you that classic jerk serious heat and fruity, tropical flavor. If you prefer medium heat, use a Fresno pepper plus a dash of cayenne. For mild heat, a red bell pepper and a little cayenne is perfect. And for the “no heat” people out there, just use a red bell pepper!
- Scallions – scallions add a fresh, savory onion flavor that is a classic part of jerk seasoning and complements the bolder spices without overpowering them. Have chives on-hand instead? Use those!
- Garlic – garlic adds a punchy, savory base to the marinade.

Blend: blend together peppers and/or cayenne, scallions, garlic, ginger, soy, sugar, lime juice, vinegar, oil, allspice, thyme, black pepper, cinnamon, nutmeg and salt until smooth and uniform.

Massage: place chicken in 2 gallon Ziploc bags. Add marinade to bags. Seal and massage chicken in marinade until thoroughly coated.
Marinate: place in fridge and let marinate for at least 4 hours, or ideally 8-12 hours.
Preheat: preheat grill to 450℉. Let chicken rest at room temperature for 20 minutes before grilling. Remove chicken from marinade and shake off any extra clumps.

Grill: grill the first side, with the lid closed, for 9-12 minutes. Flip and grill other side for 5-8 minutes, with the lid closed. Let rest for 5 minutes before digging in!

Pro Tips For the Best Jerk Chicken
- Marinate it long enough but not too long: the ideal time to marinate jerk chicken is at least 4 hours, up to 12 hours. Shoot for 8 hours if possible.
- Keep the lid closed: closing the lid helps the chicken cook through while still getting perfectly charred.
- Don’t keep flipping: let the chicken develop a good sear and char before turning it.
- Make it as spicy as you like: Scotch Bonnet peppers bring the crazy heat, but you’re in control here. Or swap in Fresno and cayenne or red bell pepper, because there’s no prize for making yourself sweat through dinner.

- 3 pounds bone-in, skin-on chicken thighs
- 1-2 Scotch Bonnet peppers for spicy, OR 1 Fresno pepper + ¼ teaspoon cayenne for medium, OR ½ red bell pepper + ½ teaspoon cayenne for mild, OR ½ red bell pepper for no heat
- 1 heaping cup scallions, trimmed and chopped (or 1 cup chopped chives)
- 3 large garlic cloves, peeled
- 1 tablespoon fresh ginger, peeled and chopped
- 2 tablespoons soy sauce
- 2 tablespoons light brown sugar
- 2 tablespoons fresh lime juice
- 2 tablespoons white wine vinegar
- 2 tablespoons neutral oil of choice, like avocado oil or canola oil
- 1 tablespoon ground allspice
- 1 teaspoon dried thyme
- 1 teaspoon ground black pepper
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- Salt, to taste
Instructions
- In a food processor or blender, add peppers and/or cayenne, scallions, garlic, ginger, soy, sugar, lime juice, vinegar, oil, allspice, thyme, black pepper, cinnamon, nutmeg and salt. Blend until smooth and uniform.

- Preheat grill to 450℉. Let chicken rest at room temperature for 20 minutes before grilling. Remove chicken from marinade and shake off any extra clumps but leave the chicken coated in marinade.
- Grill the first side, with the lid closed, for 9-12 minutes. Nice grill marks should form. Flip and grill other side for 5-8 minutes, with the lid closed, until chicken registers 165℉ in the thickest part.
- Remove from grill and let rest in a single layer for 5 minutes before digging in!

Out of this world GOOD. I’ve always wanted to make jerk chicken. Random fact I heard it was Ed Sheeran’s favorite food and I had to try!!! This recipe was easy to make. I could barely make it to four hours so it could marinate lol. I baked it instead of grilled and still totally loved it!!!!
