Not to toot my own horn, but when it comes to making fudge in the microwave without candy thermometers and pots and pans, I’ve totally cracked the code! My Peanut Butter Fudge recipe is exploding with love, and this fudge recipe is no different. Microwave chocolate chips and evaporated milk, mix together all the ingredients in a bowl, and set in a baking dish in the fridge. The result? Smooth, creamy, decadent fantasy fudge that’s chocolaty, sweet, and soft yet just firm enough to slice. You’re going to flip out!

Ingredients Needed

  • Bittersweet chocolate chips
  • Evaporated milk

Recipe Tips and FAQs

What is Fantasy Fudge?

Fantasy Fudge is a classic dessert recipe, originally found on the back of Marshmallow Creme and Fluff jars. It’s traditionally made with marshmallow creme or fluff, sugar, evaporated milk, and chocolate chips. The fudge turns out extra creamy, rich, and sweet!

Can I freeze Fantasy Fudge?

Yes, definitely! Place completely cooled fudge pieces on sheets of parchment in a freezer safe container. Freeze for up to 3 months, thawing in the fridge overnight or at room temp for a few hours.

Do I need a candy thermometer for this recipe?

No, you don’t! All you need is a microwave; you don’t need a stovetop, pots, pans or thermometers. It’s the easiest recipe around!

How do I harden the fudge?

If your fudge is too soft, freeze temporarily (for 30 minutes or so), enough for you to easily slice it. Then store in the refrigerator. While your fudge will be soft and somewhat sticky, you should be able to slice it. Make sure to follow my instructions on how to measure powdered sugar, since it’s that ingredient that thickens the fudge!

Can I use a different size pan?

While you can use a smaller or larger pan, the 8×8” pan creates perfectly thick but not-too-thick pieces of fudge.

Equipment

  • 8×8" baking pan
  • Parchment paper
  • Sifter (recommended but optional)

Ingredients

  • 10 ounces bittersweet chocolate chips
  • 5 ounce can evaporated milk, shaken
  • 3 cups powdered sugar, sifting recommended
  • ¾ cup marshmallow fluff
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup chopped walnuts, optional

Instructions

  • Line an 8×8” baking dish with parchment paper (so you can easily life the fudge out of the pan).
  • Add chocolate chips, evaporated milk, and salt to a large microwave-safe bowl. Microwave, in increments of 20 seconds, until the chocolate chips melt completely. Stir well every increment.
  • Add the vanilla. Stir. Add the fluff, and stir vigorously until smooth.
  • Add the powdered sugar (sifting recommended). See tips below on how to accurately measure powdered sugar. It may look like a lot, but trust me, it will mix in well and you need it to thicken the fudge!
  • Stir until smooth. If there are lumps, microwave mixture in increments of 15 seconds, stirring vigorously every increment, until lumps dissolve.
  • Stir in walnuts (optional).
  • Pour and spread evenly in prepared pan. Refrigerate for at least 2 ½ hours, until fully set.
  • Slice while it’s cold. I recommend using a kitchen knife or spatula to scrape fudge pieces off the parchment, since fudge will be sliceable but soft. I recommend storing in the fridge until ready to enjoy!

Notes

  • How to measure powdered sugar accurately (important!): spoon powdered sugar into a measuring cup until it’s heaping over the top. Use the back of a knife to go back and forth across the top of the cup to fill in any visible gaps or holes, and then level off so it’s smooth across the top of the cup.
  • I don’t recommend using semisweet or milk chocolate chips since there are plenty of other ingredients that will sweeten the fudge!
  • I use marshmallow fluff not creme.

It looks like you swapped the original fantasy fudge recipe using semi sweet and granulates sugar for bitter sweet and confectioners? Why- how does it change the taste? I have all ingredients either way- but never tried your version.

    1. Hi Leslee!

I use bittersweet chocolate instead of semi-sweet for a more deep, chocolatey flavor. The use of powdered sugar allows you to make the fudge in the microwave instead of the stovetop, so it’s a lot easier!

      I hope this helps 🙂
