Blueberry cobbler takes two of my favorite things – blueberries and a sweet, biscuit-like topping – and brings them together into one perfect pan of heaven. And while homemade desserts can require so much TLC that by the time they’re out of the oven, you’re exhausted and staring down a whole lot of dishes, this cobbler is as easy as it gets, requiring minimal dishes and just a handful of ingredients you probably already have on hand. I make it when blueberries are in season and plentiful, and during the holidays when I’m craving a cozy, comforting dessert I know my whole crew will rave over. You can’t go wrong…serve it with vanilla ice cream, Homemade Lemon Ice Cream, or Homemade Whipped Cream. In short, there’s no bad way or day for blueberry cobbler!

  • Blueberries – while fresh blueberries are best, you can use frozen blueberries if preferred! Don’t thaw them; add them to the batter frozen.
  • All-purpose flour – flour creates the base for the cobbler.
  • Granulated sugar – regular granulated sugar adds sweetness and helps create a crisp, golden crust.
  • Whole milk – while you can use nonfat or nondairy milk, whole milk creates a richer, more tender biscuity cake-like topping.
  • Unsalted butter – butter adds rich flavor while helping create that biscuit-style topping that’s tender yet crisp.
  • Baking powder – baking powder causes the cobbler topping to rise, staying light and fluffy.
  • Vanilla extract – vanilla extract adds rich flavor.
  • Salt – salt enhances flavor.
  • Cinnamon – a dash of cinnamons adds warmth without tasting like cinnamon.
  • Turbinado sugar – turbinado sugar creates the perfect crunchy, sweet top. You can also use coarse sparkling sugar or demerara sugar.

How to Make Blueberry Cobbler

Let’s make the most delicious blueberry cobbler in just a few easy steps! Here’s an outline; for the full recipe, see the recipe card below.

Step 1: Grease an 8×8” baking pan. Preheat oven to 350°F.

Step 2: Toss blueberries in 1 teaspoon flour.

Step 3: In a separate bowl, whisk together flour, granulated sugar, baking powder, salt and cinnamon.

Step 5: Scoop batter into the prepared pan, smoothing out in an even layer.

Ingredients 

  • 1 ½ cups fresh blueberries
  • 1 cup all-purpose flour, plus 1 teaspoon to coat berries
  • ¾ cup granulated sugar
  • ½ cup whole milk
  • 4 tablespoons unsalted butter, melted
  • 1 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 2 tablespoons turbinado sugar, for crunchy top

Notes

  • You can use fresh or frozen blueberries, although fresh are preferred. If you use frozen, keep them frozen (do not thaw them ahead of time).
  • Coating the berries lightly in flour will keep them from sinking into the batter and will absorb any extra liquid!
  • The cinnamon adds a hint of warmth without true cinnamon flavor. You can double the quantity (½ teaspoon) if you prefer a more cinnamon-forward cobbler!
  • I use whole milk. The fat content adds a rich taste and texture, but you can use skim milk if desired. I have not tried non-dairy milk but I’d imagine it would work well.
  • Turbinado sugar is coarse, gold-brown cane sugar that creates the perfect, crunchy top! You can also use coarse sparkling sugar or demerara sugar.
