Strawberry Mango Bellini

It seems like the Earth is finally waking up after a long winter, and the farm stands in New England are just opening! One of the best parts about living in New England is the changing of the seasons and the excitement that Spring brings after a long, harsh winter.

When the farm stands open in the Spring, one of the first produce items available is strawberries.

I’m making a Strawberry Mango Bellini to celebrate Spring with sweet mango puree and fresh strawberry juice squeezed into some bubbly. Talk about refreshing!

 

 

 

Makes: 1 bellini

Prep time: 5 minutes

Cook time: 0 minutes

Total time: 5 minutes

The Ingredients

2/3 glass prosecco (or champagne)

1/3 glass cold mango puree (in the grocery store, look for “puree” or “pulp” with no additives)

5 strawberries, de-stemmed

TIP: buy one mini bottle of prosecco (187mL) which should make two bellinis!

 

 

 

The Steps

In a bowl, mash 4 strawberries with a potato masher, until completely mashed. Place strawberry mash in a strainer and use hands to push juice through strainer. Set juice aside.

In a champagne glass, fill 2/3 glass with prosecco. Add 1/3 glass mango puree. Garnish with fresh strawberry juice. Don’t mix! Let layers naturally mix.

Garnish with a fresh strawberry slice.
