Cinnamon Apple Walnut Overnight Oats

Breakfast is sometimes my favorite meal of the day and sometimes my least favorite. During the week, breakfast is a chore…basically a way to fill my stomach before leaving for work!

This recipe was created out of my struggle to make weekday breakfast enjoyable. This recipe is fast, can be made in large batches, and saves in the fridge for 3-4 days. A mix of tangy apples, warm cinnamon, crispy chia seeds, toasty walnuts, and richly sweet natural honey add flavor without a ton of “feel-bad” calories. Bonus for my friends with kiddos: they’ll like it too!

 

 

 

Makes: 1 serving

Prep time: 6 hours and 15 minutes (includes 6 hour refrigeration time)

Cook time: 5 minutes 

Total time: 55 minutes

The Ingredients

1 cup quick steal cut oats

1 ¼ cup unsweetened coconut or almond milk (or regular milk)

1/3 cup toasted walnuts (bake in 300-degree oven for 5-7 minutes until slightly toasted)

¾ teaspoon cinnamon

½ teaspoon chia seeds

2 teaspoons natural honey

½ honeycrisp apple, but in wedges (or your favorite kind!)

Sprinkle more walnuts to garnish

 

 

 

The Steps

In a cereal bowl or mason jar, add oats and milk. Stir. The consistency should be liquidy.

Add honey, ½ teaspoon cinnamon and chia seeds. Stir again. Add ¼ cup toasted walnuts and stir.

Store, covered, overnight in fridge (or at least 6 hours).

In the morning, cut up apple into slices. Place slices in a small bowl and sprinkle with ¼ teaspoon cinnamon. Microwave for 15 seconds. Stir so cinnamon coats apples. Add apples to oats. Add remainder of toasted walnuts. Yum, yum, yum!
