Preheat a medium-sized nonstick pan over medium heat.
Once hot, drizzle olive oil throughout the pan. Crack the eggs into the pan in a single layer.
Cook eggs for 4-7 minutes until the whites are just set. The whites are set when they jiggle slightly when poked.
Use a spatula to separate the eggs if they’re touching each other, and then gently flip eggs using the spatula and a spoon to help guide you if necessary. Cook them on the other side for just 20-30 seconds.
Remove the over easy eggs from the pan right away. Sprinkle with salt and pepper. Serve.

Only want 1 over easy egg? Use half the olive oil. Need more than 2 over easy eggs? Use a larger pan and more olive oil, or cook the eggs in batches.
