These homemade Strawberry Popsicles are going to become your favorite summer treat for the whole family! Made with just fresh strawberries, lemon juice and oat milk, you’ll be fighting off the heat one refreshing popsicle at a time.
3tablespoonsfresh lemon juiceabout 1 or 1 ½ lemons
¾cupoat milkfind one that’s high in natural sugar
Instructions
Add sliced strawberries, lemon juice and oat milk to a blender.
Blend until smooth or almost smooth depending on preference. Add a dash more oat milk, honey, or agave nectar if you prefer a slightly sweeter popsicle.
Pour mixture evenly into popsicle mold.
Freeze for at least 3 hours until solid. Stores well in the freezer for 2-3 months (if they’re not eaten before then!).

I recommend Pacific Food brand oat milk that’s high in natural sugar (this is not an ad). Although there’s typically no sugar added in oat milk, depending on the brand you buy, there will be varying amounts of natural sugar. During the production process, oat starches break down into natural sugar. Different processes create different amounts of natural sugar! If you use a brand that’s low in natural sugar, you may need to add in a touch of agave nectar or honey.
