Made in less than 10 minutes of active time with no pots or pans, these quick pickled red onions add the perfect pop of crunch and tangy flavor to burgers, tacos, brunch favorites, and more!
Flavor additions(optional) quick list below and comprehensive list in post above
Instructions
Place the sliced onion in a medium bowl or a mason jar, large enough to hold the onions with a little extra room for the pickling liquid. Set aside.
Heat the water in the microwave, in a medium, microwave-safe container until very hot, just below a boil.
Add the honey and salt to the hot water, stirring until completely dissolved. Stir in the vinegar and any flavor additions.
Pour the pickling liquid over the onions, using the back of a spoon to ensure they’re fully submerged.
Let the onions stand at room temperature for 10 minutes. Then loosely cover with a paper towel and refrigerate for at least 1 hour, but preferably overnight for the best flavor, texture, and color. For longer storage, cover tightly and refrigerate for up to 1 month.

Notes
Prefer thinner onions? Use a mandoline! Prefer thicker slices? No problem. Just keep in mind the thicker the slices, the longer they’ll take to properly pickle.
A list of flavor variations and recommended quantities is in the post above! Some quick ideas include garlic clove(s), black peppercorns, mustard seeds, a bay leaf, crushed red pepper, dried or fresh herbs, and orange or lemon peel.
You can leave out honey/agave if preferred but it’s recommended to balance acidity!
Not shelf-stable: This is a quick pickle and is not intended for canning or pantry storage. Keep refrigerated at all times!
