I’m always craving “Super Bowl-esque” snacks like nachos, parm bites, cheesy potato skins…you get my drift. If I’m not totally mistaken, these types of cravings are pretty much the result of being a human. If you’re human and you want to calm these cravings with something healthier, try these Zucchini Parmesan Bites. They’re the definition of a satisfying snack.
Zucchini slices are tossed in panko bread crumbs and parmesan, and baked to create a crispy, cheesy shell. Because we’re using zucchini and olive oil, this recipe is healthy (wink).
Dip in garlicky marinara for extra yum.
Makes: about 2 dozen bites
Prep time: 15 minutes (doesn’t include homemade biscuit time)
Cook time: 20 minutes
Total time: 35 minutes
2 zucchinis, cut into slices
½ cup panko bread crumbs
1 tablespoon Italian seasoning
Parmigiano-Reggiano (or parmesan)
~2 tablespoons extra virgin olive oil
1 cup good-quality marinara or crushed tomatoes with a minced garlic clove mixed in!
Salt to taste
Preheat oven to 450 degrees. In a bowl, toss zucchini slices in olive oil. Place bread crumbs mixed with Italian seasoning on a plate, and roll zucchini slices individually in bread crumbs. Place slices about ½ inch apart on an aluminum-foil lined baking sheet. Sprinkle each slice generously with parmesan, pressing down so cheese sticks. Sprinkle with salt.
Bake for 15-25 minutes, until golden brown and crispy. Serve immediately with marinara (they’re best when they’re hot!).
