I love these PB bites. My fiancé loves them. My friends loves them. Everybody loves them – except for Dad, who, well, hates them. He doesn’t seem to understand the difference between bird seed and chia seed. And he thinks that cacao nibs are a sad excuse for chocolate. LOL.

Picture little, soft peanut butter “cookie” bites, with a hint of vanilla and crunchy cacao nibs for texture. A dash of honey adds just the right sweetness, and chia seeds add even more of a protein boost.
These Peanut Butter Oat Protein Bites store in an airtight container for a whole week unrefrigerated, so they’re perfect to bring to work for an on-the-go super healthy, satisfying, and delish breakfast or snack!

The Ingredients
1 cup old fashioned oats
½ cup all natural peanut butter, thoroughly mixed
2 tablespoons skim milk (or non-dairy milk)
2 tablespoons honey
1 tablespoon black chia seeds
2 tablespoons raw cacao nibs
1 teaspoon vanilla extract
The Steps
In a big bowl, thoroughly combine oats, peanut butter, skim milk, honey, and vanilla extract. Add in chia seeds and nibs. Once again, thoroughly combine.
Refrigerate mixture for 20-30 minutes before forming into ½ inch or 1 inch balls (depending on your preference!). Refrigeration allows for easier ball rolling.
Store bites at room temperature, covered, for up to one week.
