Peanut Butter Banana Chunk Breakfast Burrito

To me, breakfast is the most challenging meal of the day. I want something filling, fast, nutritious, and delicious which is a difficult combo to come by. Well if you like peanut butter as much as me, this Peanut Butter Banana Chunk Breakfast Burrito is breakfast heaven on a plate!

Start with a toasted whole wheat tortilla, layered with all natural peanut butter, thin slices of banana, salted peanuts, and a drizzle of raw honey all folded together in a lovely little package. Sweet, savory, salty, crunchy, soft….wow.

AND this peanut buttery burrito is easily made in a Jiff (pun intended).

 

Makes: 1 breakfast burrito

The Ingredients

1 whole wheat tortilla

~1 heaping tablespoon smooth peanut butter (I love All Natural Smooth Teddy’s)

½ banana, cut into very thin slices

Small handful salted peanuts

~1 teaspoon [raw] honey

 

The Steps

In a nonstick pan, heat tortilla on medium heat 3-4 minutes per side until just begins to brown. Remove from heat.

Spread a paper thin layer of peanut butter on tortilla. Layer banana slices on top of peanut butter. Sprinkle peanuts. Drizzle a small amount of honey.

Roll tortilla into a tight burrito.

Serve immediately or on the go!
