Crispy, caramelized, and salty sweet potato fries with a simple garlic-horseradish aioli: OMG! These olive oil-based sweet potato fries are easy to make and absolutely delicious. Obviously what makes these fries over-the-top delish is the garlicky aioli with a touch of lemon and horseradish. Talk about a lovely fall-time combo!
Arrange your fries in a pretty wax paper-lined glass or just eat them straight off the baking sheet. They’ll probably not going to make it into the glass…
Makes: fries for 3-4 people
Prep time: 20 minutes
Cook time: 25 minutes
Total time: 45 minutes
The Ingredients
2 large sweet potatoes, peeled and cut into 1/3 inch strips (or thicker if you prefer!)
½ cup mayonnaise
¼ cup sour cream
1 large garlic cloved, minced
2 teaspoons fresh horseradish, grated (or sub 1 teaspoon jarred horseradish)
½ lemon, juiced
¼ cup fresh parsley
Extra virgin olive oil
Salt
Pepper
Steps
Preheat oven to 450 degrees.
For fries: Place sweet potato strips on baking sheet and generously drizzle olive oil and sprinkle with salt and pepper. Toss. Spread out strips to make a single layer.
Bake in oven for roughly 25 minutes for golden fries, turning the fries half way through.
For aioli: While fries are baking, in a medium bowl, combine mayo, sour cream, garlic, horseradish, lemon, 2 tablespoons fresh parsley, 2 teaspoons olive oil, and a pinch of salt. Garnish with more fresh parsley.
Enjoy while fries are hot!
