Olive Oil Baked Fries (Two Ways)

The crispy, the crunchy, the salty.

There are a few foods that, if I could never have again, I would cry rivers and oceans. One food that would cause massive floods would be fries.

I really try to pass up the fries at restaurants unless I’m having an incredibly strong craving. This got me thinking: what if I could make a healthier french fry that I could eat without all those nasty, deep-fried oils?

The answer lies here.

Olive Oil French Fries, either plain with salt, or all fancy and delectable – with parmesan, salt, garlic, cayenne, and parsley. Whatever you choose to make today, I guarantee you’ll make the other recipe tomorrow!

 

Makes: fries for two

The Ingredients

3 large russet potatoes, washed and peeled

~1/4 cup extra virgin olive oil

~1/4 cup finely grated Parmigiano-Reggiano (or parmesan)

~1 tablespoon salt, plus more if necessary

~1 teaspoon garlic powder

~1/2 teaspoon cayenne

~1 teaspoon dried parsley (or fresh)

*Tip: adjust these seasoning amounts based on your preference! 

*Tip: I prefer garlic powder and dried parsley because they stick to the fries better than fresh (but do whatever you please, of course!).

 

The Steps

Preheat oven to 425 degrees.

Cut potatoes into 1/4 inch wide strips (adjust the strip width based on your preference!).

In a large bowl, toss potato strips in extra virgin olive oil, until just coated. Sprinkle with salt and toss again.

Place potato strips on a cookie sheet in a single layer. Bake for 20 minutes. Remove from oven and toss on baking sheet to prevent uneven baking.

Place back in oven for another 20 minutes. Toss again on baking sheet.

Place back in oven for a final 10 minutes if needed, or until most all fries are golden brown.

Remove from oven and place fries back into bowl with residual olive oil. Sprinkle fries with preferred seasonings (more salt, garlic, cayenne, parm, and/or parsley). Gently toss.

Serve hot.
