Frozen Banana Bites have the consistency of creamy banana ice cream (without the sugar or cream!). Covered in a crunchy, rich chocolate shell, these little bundles of joy remind me of a cross between mini ice cream bars and candy bars. I love to coat my Frozen Dark Chocolate Banana Bites coated in crushed walnuts or sprinkled with sea salt for added complexity and texture. Unleash your creativity with different toppings too!
Make these bites ahead of time and keep in the freezer for up to one week. For maximum yumminess, take the bites you plan on eating out of the freezer 5 minutes ahead of eating to let them thaw a bit. Warning: you may find yourself reaching into the freezer for round two!
Makes: 7 to 10 banana bites
1 large medium-ripe banana (yellow)
1 cup bittersweet chocolate chips (I like Ghirardelli!)
½ cup finely chopped walnuts
1 teaspoon sea salt
Other toppings you like!
Peel and cut banana in 1 inch chunks. Place chunks in a Ziploc bag and freeze for 1 hour. In a medium bowl, melt chocolate chips in the microwave, about 1-2 minutes, stirring every 30 seconds until smooth. Dip banana bites, one at a time, in the bowl of chocolate and place bites a few inches apart in a parchment lined freezable container.
For chocolate-walnut banana bites: place chopped walnuts on a plate. Using a spoon, dip frozen banana chunks in chocolate, and then roll half of the batch in walnuts.
For chocolate-sea salt banana bites: using a spoon, dip frozen banana chunks in chocolate, and then sprinkle half of the batch lightly with sea salt.
Experiment with other fun toppings, like other nuts, sprinkles, crushed cookies, or nut butter!
