I set out to create a hot chocolate without using the instant mix in the grocery store. Although that stuff reminds me of childhood snow days, it’s really kind of tasteless, am I right? So I decided to grow up and drink the real stuff: a Dark Chocolate “Demitasse” (a small cup of strong hot caffeine, typically espresso).
This Hot Chocolate is velvety and luxurious, and reminiscent of a molten brownie. If this description doesn’t have you scrambling to the grocery store to collect the ingredients, well then you must not be a chocolate lover…and that’s crazy!

2 oz. 60% cacao dark chocolate
1 teaspoon cocoa powder
¼ cup skim milk
¼ cup heavy cream
½ teaspoon vanilla extract
Small pinch instant espresso
In a large microwaveable mug, stir skim milk and heavy cream. Microwave for 1 minute.
Add cocoa power, vanilla extract, and instant espresso. Stir.
In a small bowl, microwave dark chocolate until melted, stirring every 30 seconds. Add chocolate to mug and stir.
Microwave for another 30 seconds, stir one more time, and pour into a small teacup or demitasse cup. Drink and savor immediately.
