Best Caesar Salad Ever (with Homemade Garlic Olive Oil Croutons)

This is the best Caesar Salad you’ll ever have.

Homemade garlic-infused olive oil croutons that are crunchy and chewy and soft, all in one bite. Dressing that’s bright and lemony. Nutty, salty Parmigiano Reggiano. Caesar Salad just went from “okay” to “holy four-letter-word!”

Makes: 4 large salads

Prep time: 20 minutes

Cook time: 10 minutes

The Ingredients

~14 ounces romaine lettuce, torn or chopped into bite-sized pieces

1 cup coarsely grated parmigiano-reggiano, plus more to garnish (or sub regular parmesan cheese)*

1 cup extra virgin olive oil

1 lemon

3 large garlic cloves

6 dashes Tabasco

1 teaspoon Worcestershire sauce

8 slices soft sandwich bread (oatmeal and/or pumpernickel are the best)

Salt & pepper to taste

2 chicken breasts, grilled (optional)

The Steps

For dressing: in a medium bowl, whisk together juice of a lemon, 2 minced garlic cloves, Tabasco, Worcestershire sauce, 3/4 cup olive oil, and salt and pepper to taste. You may need to add a bit more lemon or olive oil depending on how juicy your lemon is!

TIP: don’t over-salt because cheese is salty!

For croutons: remove the crust from sandwich bread. Cut bread into roughly ½ inch cubes. In a large pan over medium/high heat, add 1/4 cup olive oil and 1 garlic clove that’s been peeled and sliced. When oil starts to simmer, add cubed bread. Use a spatula to lightly press and turn croutons, so croutons absorb oil and evenly toast. Keep turning and toasting for 7-10 minutes, or until croutons are golden. Remove garlic slivers after toasting if preferred.

For assembly: In a large bowl, toss romaine, whisked dressing and parmigiano. Plate your masterpiece, topping generously with croutons, more parmigiano, and cracked black pepper! For a full meal, serve with sliced grilled chicken (optional).
