When I was just a kiddo, I hated apples. Apples were always the fruit on-hand in the house during the fall when they were fresh, and my mom always insisted I ate a piece of fruit every day.
One day, in an effort to get me to like apples, my mom sprinkled some cinnamon on apple slices and heated them in the microwave until they were warm and soft and sweet. “Apple pie!” she’d say and smile.
Now I love apples but I still have a soft spot for these “apple pie” bites. Indeed, it tastes like a mini apple pie without all that extra sugar and cals!
As an adult, I can’t wait for the first chilly day of fall to whip out my favorite mug and make Apple Pie Bites. With a sprinkle of cinnamon granola on the top, you’ll have the Apple Pie Bites bug too.

The Ingredients
1 apple, cut into thin slices (I like honeycrisp apples)
¼ teaspoon cinnamon
¼ cup cinnamon granola
The Steps
In a microwavable bowl or mug, add half apple slices and sprinkle half of the cinnamon. Add remaining apples and then remaining cinnamon. Add granola to top.
Microwave for 40-50 seconds until warm and apples soften but still have some crunch.
